Chocolate chip zucchini cake made with coconut oil and peanut flour. And chocolate drizzle on top. I used a Venezuelan dark chocolate. Next victim will be eggplant in baked goods. The Japanese eggplants I find are very similar to zucchini in texture, moisture and flavor. Also they're WAY easier to find.
And this is more baked oatmeal. Carrot cake flavor this time!
